Try Roasting It – Okra Fries

Yes, we like breaded and fried okra, but surely there has to be a healthier (and less messy) way to fix it. Then, someone suggested tossing the pods in a little olive oil and roasting them. Barry tried it and we agreed that okra fries are very tasty, and another way to add a green veggie to the plate.

Oven-Roasted Okra Fries
      2 to 4 serving
20 to 30 okra pods (no longer than 4”), sliced in half, lengthwise
Kosher salt and pepper to taste
Olive oil

1.     Place the cut okra pods on a baking sheet; season with salt and pepper; drizzle with olive oil.

2.     Bake at 400° for 10 to 15 minutes or until browned and crisped.

3.     Serve warm.

  1. I think I will try this okra recipe. Queenie's has a collard green seasoning that normally use to deep fry.
