Simple Sloppy Joes

I grew up eating Beef Burgers but today I just wanted to make a simple Sloppy Joe using ingredients I had on hand.

Simple Sloppy Joes       6 servings
1 lb. lean ground beef (80/20)
1/2 to 3/4  cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons prepared yellow mustard
3/4 cup ketchup
  1. In a medium-sized Dutch oven or skillet over medium heat, brown the ground beef, breaking it up as it cooks.
  2. Once it begins to brown, add onions and green pepper. Cook until veggies are tender are meat is well browned. Drain off any excess fat. (If you are using really lean beef and meat begins to stick, add a little oil during cooking process.)
  3. Stir in garlic powder, salt, pepper, mustard and ketchup; mix thoroughly.
  4. Reduce heat and simmer for at least 30 minutes -- taste during cooking time and adjust seasonings as desired. Meat mixture could be transferred to a slow cooker set on low to simmer . . . and left there longer than 30 minutes.
