Grandma Eversole’s Skillet Fried Potatoes -- Comfort Food from a Skillet


     According to Barry, his Grandma Eversole, who lived in the hills of Missouri, fried potatoes for breakfast, lunch or dinner . . .  and sometimes for all three meals. That involved lots of peeling but she didn't seem to mind. And,  he says she was “a master of the cast iron skillet.” Every once in awhile he gets a hankerin’ for potatoes done the old fashioned way.
     His grandmother probably used lard or even bacon grease for the fat. Barry used vegetable oil; here’s his version of her fried potatoes . . .

Grandma Eversole’s Skillet Fried Potatoes
Potatoes (Russet)
Salt & pepper to taste
Fat – Barry uses about a 3 to 1 combination of canola and olive oil

1. Peel and slice potatoes.
Barry used a mandoline food slicer to create uniform, thin slices.
2. Liberally salt and pepper potatoes
3. Add enough oil to cover the bottom of a cast iron skillet and set heat to medium.

4. Add potatoes to the hot skillet. Fry for a few minutes to begin crisping the bottom.

5. Cover and cook for approximately 15 to 20 minutes — potatoes should be crisp on bottom and partially fork tender.

6.     Lift and turn potatoes and continue to fry until underside becomes partially crisp and potatoes are completely fork tender.

Grandma Eversole’s Hamburger Steaks & Caramelized Onions -- Missouri Comfort Food


     After depositing a sack of groceries on the counter, Barry grabbed two cast iron skillets and announced that Grandma Eversole’s Hamburber Steaks with Caramelized Onions were on the evening menu.
     According to Barry,  “Following the death of her first husband, Grandma married a 'hillbillie' from a remote area in Missouri.” Frying was her usual mode of cooking and she did it in cast iron skillets, standing over a wood-burning stove. After years of practice, her cooking was automatic but the results were over the top. However, we’re pretty sure the word “carmelized” was not in her regular vocabulary — she would have simply used the word fried!
     Here’s Barry’s rendition of his grandma’s recipe . . .

     By the way, what goes with hamburger steak and onions? Fried potatoes, Eversole style. and broccoli. Steamed broccoli would have probably never have made it to Grandma Eversole's plate, but thank you Barry for adding it for me.

Hamburger “Steaks” and Caramelized (Fried) Onions 
Lean ground beef (80% lean)– about ¼ lb. per person
Kosher Salt

1.     Form the ground beef into patties.
2.     Season the top of the patty with salt, pepper and Worcestershire.


3.     Heat the oil in a cast iron skillet over medium heat. Fry the patties until they are nicely browned and caramelized; flip and re-season. Continue to fry until underside is nicely browned and caramelized.

4.     For added flavor, add patties to the skillet of caramelized onions as they finish cooking.


Quick & Easy Caramelized Onions   -- This is a larger batch recipe so cut it down proportionally  . . . or make a larger batch for other uses.
(1 lb. of onions = 4 to 5 medium to large (5 large raw onions yields about 2 cups caramelized onions)
The sharpness of onions seems to disappear when they are cooked; they become slightly sweet. Caramelized onions add flavor to beef, chicken, pork and refried beans; they can be used as a topping for potatoes, soup or to make an onion dip. The traditional process takes about 40 to 45 minutes but they can be made quickly and easily following this process . . .
3 tablespoons butter
2 tablespoons olive oil
2½ lbs. onions, thinly sliced (yellow, white, or sweet varieties, such as Vidalia)
Kosher salt and pepper
2 teaspoons granulated sugar
Water, balsamic vinegar or wine to deglaze

1.     In a large skillet (use a cast-iron skillet for the best caramelization), heat the butter and olive oil over medium-high heat. Add the onions and about 1/4 teaspoon each salt and pepper; cook, stirring off and on, until the onions begin to soften, about 5 minutes.
2.     Stir in the sugar and cook, scraping the browned bits off the bottom of the pan frequently, until the onions are golden brown, about 20 minutes.

3.     At the end of the cooking process add a little water, balsamic vinegar or wine to help deglaze the pan.
4.     Onions may be stored in the refrigerator for several days in an air-tight container.

Savory O’s — “O” so good snacks!



     Barry’s food experiments are usually pleasing to the palate. However, I had my doubts when he revealed this latest concoction! During a phone conversation he told me that instead of making his usual Spicy Oyster Crackers, he had used Cheerios. He seemed quite thrilled with the outcome. Actually he said, “I have a new blog addition!”
     Hmmm . . . I was wondering how I was going to get out of that one. But, I was also concerned about even tasting the stuff.  By the time I arrived home, I was determined to at least try a few. After all, I didn’t want to hurt his feelings.
     I tasted, I liked and I must admit that I now eat the stuff by the handfuls. It may sound strange but it’s really good. After all, Chex Mix is now an all time classic snack so maybe Savory O’s have a chance.

Savory O’s
Barry never really measures . . . this is as close as I can come to amounts but the recipe is variable, so adjust to your tastes as he does.

About 4 cups O’s cereal (Cheerios® or at oat O’s cereal)
1 cup vegetable (canola) oil
2 (1 oz.) pkg. Ranch-style dry dressing mix (or 6 tablespoons)
2 teaspoon dried dill weed
3 teaspoon dried Italian seasoning blend

1.  Pour O’s cereal into a large microwave-safe bowl.
2.  Combine remaining ingredients in a measuring cup; whisk to mix completely. Pour over cereal and toss until all are well coated.


3.  Microwave (high) uncovered for 3 to 4 minutes or until heated -- stopping and stirring at least twice. Cool completely.

4.  Store in a covered container.

Spinach & Salmon Salad w/ Lemon-Dijon Vinaigrette . . . using last night’s leftover salmon



     Last night’s salmon was delish but the portion was way to big for me. The leftovers were just right for today’s luncheon salad. (Although Panko-Crusted Salmon worked well in this salad, any leftover baked or poached salmon would work.)
     And since salmon and lemon pair so well . . . I made a Lemon-Dijon Vinaigrette that featured The Tasteful Olive’s Lemon Extra Virgin Olive Oil and Lemon Balsamic Vinegar. It was the perfect topping for a yummy salad.

Lemon-Dijon Vinaigrette     Enough to liberally dress two luncheon salads
¼ cup  Lemon (flavored) Extra Virgin Olive Oil
2 tablespoons Lemon Balsamic Vinegar
1 tablespoon Dijon mustard
½ teaspoon coarsely ground black pepper

Combine all ingredients in a bowl. Whisk until thoroughly mixed.

Spinach & Salmon Salad Makes 2 luncheon salad
2 large handfuls of baby spinach leaves
2 hard cook eggs, cut into slices
1 tablespoon toasted sunflower seeds
4 oz.+ cooked salmon fillets
2 tablespoons+ freshly grated Parmesan cheese
Croutons – if desired

Layer salad ingredients, in order listed. Dress with Lemon-Dijon Vinaigrette right before serving.
