Roasted Beet & Red Onion Salad or Side

Another dish from our garden! Serve the roasted beets and red onions over greens for a salad or forget the lettuce and use the veggies as a sumptuous side dish. Cheese would also be a nice addition to this salad -- perhaps shaved Parmesan or chunks of blue cheese. 


Sliced beets and onions are ready to roast. 

Roasted Beet & Red Onion Salad or Side      About 4 servings

2  to to 3 large beets, peeled & sliced about 1/2” thick

1 large red onion, peeled & thinly sliced

2 to 3 garlic cloves, peeled & chopped

2 to 3 sprigs fresh thyme

2 Tablespoons olive oil

1 Tablespoon brown sugar

1 teaspoon salt

Leafy lettuce 

Toasted walnuts

Extra Virgin Olive Oil and Blanco (white) Balsamic Vinegar for drizzling over salad

  1. Preheat the oven to 350° F. Spray a large baking sheet with cooking spray or brush lightly with olive oil.
  2. In a medium mixing bowl, toss together the beets, onions, cloves, thyme leaves, olive oil, brown sugar and salt until all the veggies are coated in oil and well mixed.
  3. Spread the mixture out over the prepared pan and bake for 45+, stirring every fifteen minutes or until the beets are tender and the onions are tender. Pan could be covered with foil during the last 10 to 15 minutes if they are becoming too caramelized.
  4. To make a salad: Arrange roasted beets and onions over lettuce. Top with walnuts. Drizzle with olive oil and Extra Virgin Olive Oil and Blanco (white) Balsamic Vinegar.

Roasted Beet Salad w/ Cottonwood River Reserve Cheese from Wiebe Dairy


I've made several versions of roasted beet salad but the addition of Wiebe Dairy's premier Cottonwood River Reserve Cheese elevates this version to the highest level. 
Jason Wiebe cheeses are all the rage at Facebook's Shop Kansas Farms group. We found Wiebe cheese at Hildebrand Dairy's retail store and at the local Farmer's Market; it can also be ordered from the Jason Wiebe Dairy website  Astatement on their site says, "Our natural raw milk cheese and pasteurized milk cheese is made in Kansas on the farm (Farmstead cheese) from grade-A milk. Our goal is to make the best cheese you have ever eaten."
This is what they have to say about their Cottonwood River Reserve Cheese: "Cottonwood River Cheddar is a raw milk aged cheddar with an unique process that develops a full, slightly sweet flavor without the acid bite of a typical aged cheddar. It is pale yellow in color, body is firm, and is getting outstanding reviews since starting to market it in summer 2011." Barry and I both think it is OUTSTANDING! 

Roasted Beet Salad w/ Cottonwood River Reserve Cheese 
Garden Lettuce — tear into bite-sized pieces
Roasted Beets — peel, dice, toss in olive oil, season w/ salt & pepper and roast @ 400° for about 15 to 20 minutes or until tender; I allow a handful of beets per salad
Toasted Walnuts — spread walnuts in an even layer on baking sheet; bake 4 to 5 minutes to enhance the nut’s natural flavor
Cottonwood River Reserve Cheddar Cheese
Salt & pepper to taste or as desired 
  1. Arrange lettuce on plates; top with roasted beets and toasted walnuts. 
  2. Slice or shave thin strips of Cottonwood River Reserve Cheddar Cheese over each salad.
  3. Drizzle with Sunflower Oil Dressing and add salt and pepper if desired.
RED, WHITE & BLUE – This salad becomes patriotic with red beets, white Cheddar and a blue plate!

Beet Borscht -- goodness from the garden!

Fresh produce was the inspiration for this recipe—beets, potatoes, onions, thyme and dill—all ingredients that we picked in our garden!
  



Borscht is a sour soup common in Eastern Europe and Northern Asia. The word "borscht" is most often associated with the Ukrainian version that is made with beets that impart a distinctive earthy flavor and red color. Potatoes, cabbage and onions are other typical ingredients. However, other variations of borscht leave out the beets and rely on cabbage and potatoes as their main ingredients. Beef or even beans can be added, and many recipes include carrots. 

Beet Borscht    8 to 10 servings 
3 to 4 tablespoons olive oil, divided use
2 celery ribs trimmed and finely chopped
1 small bell pepper finely chopped
1 medium onion finely chopped
1 large garlic clove, minced
2 to 3 tablespoons tomato paste
3 to 4 medium beets peeled and grated or diced (I grated half and diced half)
2 carrots peeled and diced
About 1/4 cup head cabbage, green or red, thinly sliced
6 to 8 cups reduced sodium chicken broth + extra water or broth as needed (or use beef or vegetable broth)
3 to 4 small to medium potatoes, diced (Since I was using new potatoes with a thin skin, I did not peel)
2 bay leaves
Several sprigs fresh thyme, tied together
Several sprigs fresh dill weed + extra for garnish
2 to 3 tablespoons apple cider vinegar
1 teaspoon kosher salt
1/4 teaspoon coarsely ground black pepper
Dollops of sour cream of serving
  1. Heat a large soup pot (5 1/2 quart or larger) over medium/high heat and add 2 tablespoons olive oil. Add chopped onion, celery and bell pepper. Sauté, stirring occasionally until softened and lightly golden (7 to 8 minutes); add garlic near the end.. Stir in 2 to 3 tablespoons tomato paste. Transfer mixture to a bowl.

  2. Add remaining 2 tablespoons olive oil to pot. Add prepared beets, carrots and cabbage; sauté 10 minutes, stirring occasionally until veggies are softened. 


  3. Add 6 cups broth, potatoes, bay leaves, thyme bundle, a few sprigs of dill weed, cider vinegar, salt and pepper to taste + sautéed onion mixture.  Bring mixture to a boil, reduce temperature and simmer soup until potatoes are tender and flavors are blended. Adjust seasonings as preferred.

  4. Serve with extra sprigs of dill and dollops of sour cream if desired.
    I served the soup with an herb filled Pane Bianco, twisted Italian loaf.

Spinach & Roasted Beet Salad -- perfect for Fall!

Plenty of nutrients in this end-of-the season salad — it's perfect for Fall! Add as much or as little of each ingredient as you prefer.


Spinach & Roasted Beet Salad
Baby spinach leaves
Roasted beets, cubed and flavored with fresh thyme
Walnuts, coarsely chopped
Blue cheese crumbles
Celery Seed Dressing 
  1. Place spinach leaves in salad bowl. Top with roasted beets, walnuts and blue cheese.
  2. Drizzle with Celery Seed Dressing.


Roasted Beet Salad with Blue Cheese & Pine Nuts + Apple Cider Vinaigrette

Fresh beets from Ted Sexton's fall garden pair deliciously with blue cheese, toasted pine nuts and Apple Cider Vinaigrette. Another wonderful reason I LOVE fall!

Roasted Beet Salad with Blue Cheese & Pine Nuts + Apple Cider Vinaigrette      
8 servings
4 medium beets (1 1/2 pounds total), scrubbed & trimmed but with about 1” of rthe root intact, unpeeled
About 1/4 cup Apple Cider Vinaigrette (recipe follows)
2 tablespoons finely chopped fresh parsley
8 handfuls mixed salad greens
1/2 cup crumbled blue cheese
1/2 cup toasted pine nuts (spread out on tray and bake @ 350° for 5 to 8 minutes until golden brown -- watch carefully)
  1. Preheat oven to 450°.
  2. Individually wrap 4 beets in foil. Place on a baking sheet and roast until tender when pierced with a paring knife, 45 to 60 minutes.
  3. Let cool. Rub beets with paper towels to remove skins and cut into cubes. 

  4. Toss beets with about /4 cup Apple Cider Vinaigrette and parsley and allow to marinate if time allows.
  5. Fill a platter (or individual salad plates if preferred) with salad greens.
  6. Top greens with marinated beets, blue cheese and toasted pine nuts.
  7. Add enough Apple Cider Vinaigrette to coat salad greens . . . or pass the salad dressing if preferred. 

Apple Cider Vinaigrette
1/4 cup apple cider
1/4 cup white wine vinegar
1 tablespoon Dijon mustard
2 tablespoons agave syrup
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup canola oil
1 1/2 tablespoons minced onions
  1. Combine first 6 ingredients in a small bowl, stirring with a whisk.
  2. Gradually add oil, stirring constantly with a whisk.
  3. Stir in minced onions and refrigerate until ready to use.
