Zucchini & Sausage Skillet – 2 Ways

Sandi Dutt not only provided the zucchini but also a recipe that she grew up eating. She makes it with kielbasa, but I also tried it with ground sausage + also added the peppers . . . so it's a flexible recipe. It makes a quick and tasty dinner and is a great way to use up excess zucchini.

Zucchini & Sausage Skillet – 2 Ways

2 servings

2 – 3 tablespoons olive oil

½ to pound ground sausage or 1 link of kielbasa, cut into ¼” thick round 

½ onion, diced (yellow, white or red)

About 4-5 mini red, yellow or orange pepper, diced

Corn from 2 ears of fresh corn or about 1 cup+ frozen corn

2 to 3 cups zucchini sliced thin – about ⅛”

2 tablespoons oil (1 Tbsp. olive and 1 Tbsp. vegetable)

½ to 1 tablespoon CCG – Chili, Cumin & Garlic blend (We purchase a blend but could use a combo of chili powder, cumin and fresh minced garlic) 

  1. Add olive oil to a skillet set over medium heat (less oil if using ground sausage, more for kielbasa.
  2. Add sausage, onion, pepper and cook until ground sausage is done and onions and peppers are tender; if using kielbasa, cook until edges begin to brown and onions and peppers are tender.

  3. Add corn and cook a minute or two, and then add zucchini and CCG and  cook and stir for a few minutes; add lid and steam 3-5 minutes until the corn and zucchini are tender.

SABOR’S BEEF PICADILLO as featured in KANSAS! 2025, vol 81, issue 4

 One of our favorite eating places was featured in the Taste section of KANSAS! (vol 81, 2025, issue 4) and included this recipe. Beef Picadillo is not only one of Sabor’s specialties, it’s a Latin American favorite that varies by region. Sabor’s interpretation of this classic dish is flavored with their own labor-intensive mole sauce made with a base of chile peppers and tons of spices. Store-bought mole can be substituted when making this recipe that goes quickly from skillet to plate. . By the way—the name picadillo (pee-cah-DEE-yo) essentially means  “all chopped up” in Spanish and translates to ``hash'' in English.


Designed to be quick-to-make at the restaurant, it is also ideal for a quick fix recipe for home cooks It was done in record time when we tested it at home. Chef Garson Harody Saavedra's instructions were also easy to follow. I did serve the piccadilly over polenta rather than the mashed potatoes used at Sabor.

  

SABOR’S BEEF PICADILLO     

Yield: One generous serving 

INGREDIENTS 

3 tablespoons cooking oil

6 ounces beef tips, cut into bite-sized pieces 

1/2 medium red pepper, thinly sliced

1/4 medium yellow onion, thinly sliced

1 cup button mushrooms, cut into 1/4-inch slices 

1/2 cup frozen corn 

4 ounces (1/2 cup) mole sauce 

Garnishes: pepperoncini pepper & chopped cilantro


STEP-BY-STEP INSRUCTIONS 

1.   Heat oil in a skillet set over medium-high heat. 

2.   Once the skillet is hot, add beef tips and sauté, tossing and stirring occasionally, just until no longer pink on the outside. 



3.   Add onions, peppers and mushrooms; toss or stir occasionally for about another 3 minutes or until onions are translucent. 

4.   Add corn and mole; simmer for 3 minutes allowing flavors to meld.


5.   
Plate and garnish with a pepperoncini pepper and chopped cilantro.

To plate this dish the chefs at Sabor spoon chipotle mashed potatoes onto one side of the plate and then add a generous portion of Beef Picadillo. This meal pairs well with a glass of Sabor’s handcrafted red sangria. 

(For those with smaller appetites, this could very well make two home-style servings.)

LeSueur Pea Salad

As we entered her apartment at Homestead Virginia (soon to be 102 at the time) sputtered, “We just had the worst macaroni and cheese — baked so long it was dry and served with frozen peas that were still frozen! Simply horrified by that meal, her mind conjured up an old-time favorite. “Do you remember LeSueur Pea Salad? Virginia recalls, “By the time we were finished making it, the counter was lined with cans.  It has peas, green beans, some kind of special corn, celery, a whole lot of things. We served it with just about anything and took it to potlucks, too.”

Besides being quite tasty, the salad will keep for several days stored in a covered container in the refrigerator


Shoepeg corn is a white and sweeter than other corn. It is characterized by small, narrow kernels and it's flavor is described as sweet and mild. 


LeSueur Pea Salad  (also know as Shoe Peg Corn Salad & Mainiated Salad)  

About 8 servings

Salad:

1 (15 ounce) can LaSure peas, drained

1 (15 ounce) can Shoepeg corn, drained

1 (15 ounce) can French cut green beans, drained

1 cup chopped celery

1/2 cup chopped green bell pepper

1/2  cup chopped onion

1 (2 ounce) jar pimentos

Vinaigrette:

1 cup granulated sugar

3/4 cup white  vinegar

1/2 cup vegetable oil

1 teaspoon salt

1/2 teaspoon ground black pepper

  1. Assemble salad: Mix together peas, corn, green beans, celery, bell pepper, onion, and pimentos in a large bowl.
  2. Make vinaigrette: Combine sugar, vinegar, oil, salt, and black pepper in a saucepan over medium heat. Bring to a boil, stirring occasionally.
  3. Pour boiling vinaigrette over salad; stir to coat. Refrigerate for 24 hours before serving.

Chicken Tortilla Soup, Crockpot-style with Crispy Tortilla Chips

Assemble it and forget it! The recipe was exactly was I had it mind for an easy, comfort food soup on a cold, rainy day. Crispy Tortilla Chips are an added treat!

We garnished the soup with fresh cilantro, grated cheese & sour cream. 

Chicken Tortilla Soup, Crockpot-style  with Crispy Tortilla Chips 6 servings

Soup:







1 tablespoon olive oil

1 onion chopped

3 cloves garlic large, minced

2 teaspoons ground cumin

2 teaspoons chili powder

1 (14 oz.) can crushed tomatoes

1 (10 oz.) can Rotel tomatoes

4 cups chicken broth

1 (14 1/2 oz) canned black beans, drained and rinsed

1 cup frozen corn

2 chicken breasts

1/4 cup fresh cilantro, or 1 to 2 tablespoons dried cilantro

1 teaspoon kosher salt & 1/2 teaspoon black pepper

Crispy Tortilla Chips:

6 6-inch corn tortillas cut ¼-inch strips

Oil for frying

  1. Soup: Cook onion, garlic and jalapeño in olive oil. Add to the bottom of a slow cooker.

  2. Add remaining soup ingredients to the slow cooker and cook on high for 4 hours. 
  3. Shred chicken and add back to the pot. Taste and adjust seasonings as needed.
  4. Serve with tortilla strips.

  5. Crispy Tortillas: Heat oil over medium-high heat a small pan. 
  6. Add tortilla strips in small batches and fry until crisp. 
  7. Drain on paper towels and salt.

Tex Mex Chicken & Zucchini Skillet

A skillet meal loaded with garden veggies. A tasty meal-in-one that is a quick fix!

1 medium bell pepper, diced

2 garlic cloves minced

About 3/4 cup corn frozen or fresh (I used corn cut from the cob)

About 3/4 cup garden tomatoes, peeled & cut into chunks

About 1 to 1 1/2 cups cooked chicken, chopped or shredded

1 teaspoons taco seasoning, homemade or commercial or homemade taco seasoning

1 1/2 teaspoons cumin 

1 teaspoon kosher salt

Ground black pepper to taste

1 medium zucchini, seeded & cut into chunks

1 cup Cheddar or Pepper Jack cheese, shredded (or use a combo) 

  1. Heat olive oil in  medium cast iron (or other heavy) skillet on low to medium heat with the.
  2. Add onion, and bell pepper; sauté for 3 minutes, stirring occasionally; add garlic after about 2 minutes. 
  3. Add corn, beans, tomatoes, cooked chicken, taco seasoning, cumin, salt & pepper. Stir, cover and cook on low-medium for 10 minutes; add zucchini after about 5 minutes (add now to avoid overcooking). 

  4. Sprinkle with cheese, cover and cook for a few minutes or until cheese has melted.

Cheesy Mexican Squash Soup

Barry's garden is bursting with goodness and has inspired me to try all sorts of new recipes. This squash soup has me going back for seconds—such a tasty way to use up excess yellow crookneck and zucchini squash. We happened to get ahold of a very spicy can of Mexican-style tomatoes (perfect for me a bit hot for Barry) so if you are concerned about heat, use diced tomatoes and perhaps add a few green chilies or make sure your hand is labeled "mild." Normally we avoid processed food including processed cheese but it adds a very creamy component and great taste to this recipe. Perhaps I’ll experiment with adding cream cheese and Cheddar next time I make this. And, I will definitely make it again . . . and again.  

Note: 10 minutes cooking time (after adding squash) is the perfect time as it creates tender (not soggy) squash that still has a somewhat crisp texture.

Cheesy Mexican Squash Soup      6 servings

1 tablespoon olive oil

1 cup chopped onion

2 cloves garlic, minced

1 tablespoon fresh oregano, chopped or 1/2 teaspoon dried oregano + extra for garnish

2 (14.5 ounce) cans chicken broth

1 (14.5 ounce) can Mexican-style tomatoes (such as Ro-tel)

2 medium zucchini, halved lengthwise and cut in 1/4 inch slices

2 medium yellow squash, halved lengthwise and cut in 1/4 inch slices

1 (8.75 ounce) can whole kernel corn, drained or use equivalent amount of frozen corn

12 ounces processed cheese food, cubed

Kosher alt to taste 

About 1 teaspoon coarsely ground black pepper      

  1. Heat olive oil in a large pot over medium-high heat. Cook onion and garlic until tender; add oregano. 

  2. Mix in chicken broth and tomatoes. Bring mixture to a boil. 
  3. Stir in zucchini, yellow squash, and corn.. Reduce heat to low; simmer until squash is tender, about 10 minutes. 

  4. Stir cubed processed cheese into soup. Continue to cook and stir until cheese is melted; season with salt and pepper as needed. 
  5. Garnish with fresh oregano if desired.

Confetti Chicken

Creating dishes based on what’s in the refrigerator is a fun way to use leftovers. This week the inspiration was leftover rotisserie chicken, mini peppers and a bag of frozen corn that we cut from the cob. Since we usually cook for two, we often just start adding ingredients so what follows is more of a guide than a recipe with specific ingredients.

Confetti Chicken

Avocado or olive oil

Mini Red, yellow & orange peppers, sliced 

Red onion, thinly sliced

Garlic clove, diced

Corn, frozen or cut from the cob

Black beans, drained & rinsed

Kosher salt & black pepper to taste

Cumin, just a dash or two

Chicken breasts, roasted, baked or grilled 

Cilantro for garnish

  1. Add a tablespoon of so of oil to a pan and heat over medium heat. Add peppers and onions and sauté until veggies are tender; add garlic near the end.
  2. Add corn and cook until it is tender.
  3. Add black beans + seasonings. Top with chicken breast.  Cook for at least 10 minutes on low temperature to meld flavors and to heat beans and chicken.
  4. Top with fresh cilantro for serving. 

7-Can Soup

Here’s a “dump” recipe that is amazing. Created by The Pioneer Woman, I would have never given it a second thought, but then we ate it at a holiday party at the home of Kathy and John Gruber and everyone was clamoring for the recipe. It’s literally a 7-can soup + cheese that cooks for just about 15 minutes. BUT, it tastes like it has simmered for much longer as the flavors meld to create a very tasty soup. We will definitely keep these ingredients on hand for a fast and easy meal.


7-Can Soup

1 (15 oz.) can kidney beans

1 (15 oz.) can pinto beans

1 (15 oz.) can black beans

1 (15 oz.) can diced tomatoes

1 (15 oz.) can corn (Fiesta variety preferred)

1(10 oz.) can Rotel® (tomatoes with green chilies)

1 (15 oz. ) can meat-only chili

Salt and pepper, to taste (could also use a favorite seasoning salt)

8 oz. weight Velveeta, cubed

Optional accompaniment: Corn Chips

  1. Without draining the cans, empty the chili, kidney beans, pinto beans, black beans, tomatoes, corn, Rotel® tomatoes with green chilies and meat-only chili into a large pot over high heat. 
  2. Bring to a boil, reduce the heat, and simmer for 10 to 15 minutes to bring all the flavors together. Add salt and pepper as needed.
  3. Dice the cheese and stir it into the soup until melted. 
  4. Kathy served this soup with corn chips and we think they are a nice accompaniment. 

Easy Black Bean Vegetarian Chili with Spiced Yogurt

This is yet another recipe my sister, Marla Payne, found, tested and then shared. Easy Black Bean Vegetarian Chili with Spiced Yogurt   6 servings

Spice Mix:

1 1/4 tablespoon cumin

1 1/4 tablespoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon smoked paprika

1 teaspoon kosher salt

Chili:

3/4 cup whole milk plain yogurt (I used homemade yogurt)

2 (15 oz.) cans black beans (or use Instant Pot Seasoned Black Beans)

1 tablespoon olive oil

1 medium onion, chopped

1 red bell pepper, chopped

1 diced jalapeno, plus more for garnish

1 (10 oz.) can Rotel tomatoes with green chilies

8 ounces frozen corn

1(8 oz.) can tomato sauce

3/4 cup less-sodium vegetable broth

Optional Toppings: chopped jalapenos shredded cheddar, diced red onions, cilantro, diced avocado

  1. Mix the spices in a small bowl. Mix1 1/2 teaspoons with the yogurt and set aside.

  2. Place 1 can of beans, not drained in the blender with 1/2 cup of water and puree. Drain the second can.
  3. Add oil to a large pot over medium heat, add the onions, bell pepper and jalapeno and cook 3 to 4 minutes.
  4. Add tomatoes, corn, beans, pureed beans, tomato sauce, vegetable broth and remaining spices.
  5. Serve topped with spiced yogurt plus your favorite optional toppings.

Note: Refrigerate chili for up to 4 days or freeze for up to 3 months.

Loaded Zuppa Toscana (Tuscan Soup)

Cooler weather calls for soup in our household. This is a new recipe that my sister Marla Payne provided. It is `"M'm! M'm! Good!″ 


Loaded Zuppa Toscana (Tuscan Soup) About 10 serving 

6 slices bacon uncooked

1 lb. ground spicy Italian sausage

1 onion, diced (about 1 to 1 ½ cups)

3 carrots, diced (about. 1 ½ cups)

3 stalks celery, diced (about 1 ½ cups)

4 to 6 garlic cloves, minced

1/3 cup all-purpose flour

1 1/2 pounds/3 medium russet potatoes cut into bite size cubes

1 (15 oz) can cannellini beans rinsed and rained

1 (15 oz.) can can sweet corn rinsed and drained

1 (15 oz.) can creamed corn

4 cups low sodium chicken broth

3 cups whole milk

3 tablespoons cornstarch 

1 tablespoon Dijon mustard 

SPICES: (if in a hurry, 2 1/2 teaspoon Italian seasoning could be substituted for the parsley  basil, oregano & thyme listed below)

2 bay leaves

1 teaspoon EACH dried parsley, salt (or use fresh parsley & increase to 2 teaspoons)

1/2 teaspoon EACH dried basil, dried oregano (or use fresh herbs & double amount)

1/4 teaspoon EACH dried thyme, pepper (or use fresh herbs & double amount)

1/4 teaspoon red pepper flakes, or more to taste (optional if you like heat)

2 to 3 cups finely chopped kale with stems removed or use spinach and add later

ADD LATER:

1 to 2 cups half and half or whole milk as needed 

2 to 3 cups loosely packed fresh chopped spinach or use kale and add earlier

GARNISH: 

Remaining bacon not already added to soup

Fresh parsley

Parmesan cheese

  1. Cook bacon in Dutch oven/large stock pot until crispy; remove from pot. Drain all but 2 tablespoons bacon grease or add additional olive oil to equal about 2 tablespoons.
  2. Add onions, carrots and celery and sauté for 5 minutes over medium heat. 
  3. Increase heat to medium high and add sausage and garlic and cook, while crumbling meat, until meat is browned, about 3 minutes. 
  4. Sprinkle in flour and cook, while stirring, an additional 2 minutes.
  5. Turn heat to low and stir in potatoes, cannellini beans, creamed corn and sweet corn. 
  6. Add chicken broth. 
  7. Whisk cornstarch with milk and add to pot. 
  8. Stir in Dijon, bay leaves and all seasonings.
  9. Add kale if using or wait and add spinach later.
  10. Increase heat to high, cover pot and bring to a boil. Remove lid and reduce heat to a gentle simmer until potatoes are fork tender and flavors have melded, about 30+ minutes, stirring occasionally.
  11. Stir in half and half, adding additional broth or half and half if desired for a less “chunky” soup and warm through.
  12. Remove from heat and stir in spinach if using,  and half of chopped bacon.
  13. Garnish individual servings with remaining bacon, fresh parsley and Parmesan cheese.

SPICES: (if in a hurry, 2 1/2 teaspoon Italian seasoning could be substituted for the parsley  basil, oregano & thyme listed below)

2 bay leaves

1 teaspoon EACH dried parsley, salt (or use fresh parsley & increase to 2 teaspoons)

1/2 teaspoon EACH dried basil, dried oregano (or use fresh herbs & double amount)

1/4 teaspoon EACH dried thyme, pepper (or use fresh herbs & double amount)

1/4 teaspoon red pepper flakes, or more to taste (optional if you like heat)

2 to 3 cups finely chopped kale with stems removed or use spinach and add later

ADD LATER:

1 to 2 cups half and half or whole milk as needed 

2 to 3 cups loosely packed fresh chopped spinach or use kale and add earlier

GARNISH: 

Remaining bacon not already added to soup

Fresh parsley

Parmesan cheese

  1. Cook bacon in Dutch oven/large stock pot until crispy; remove from pot. Drain all but 2 tablespoons bacon grease or add additional olive oil to equal about 2 tablespoons.
  2. Add onions, carrots and celery and sauté for 5 minutes over medium heat. 
  3. Increase heat to medium high and add sausage and garlic and cook, while crumbling meat, until meat is browned, about 3 minutes. 
  4. Sprinkle in flour and cook, while stirring, an additional 2 minutes.
  5. Turn heat to low and stir in potatoes, cannellini beans, creamed corn and sweet corn. 
  6. Add chicken broth. 
  7. Whisk cornstarch with milk and add to pot. 
  8. Stir in Dijon, bay leaves and all seasonings.
  9. Add kale if using or wait and add spinach later.
  10. Increase heat to high, cover pot and bring to a boil. Remove lid and reduce heat to a gentle simmer until potatoes are fork tender and flavors have melded, about 30+ minutes, stirring occasionally. .
  11. Stir in half and half, adding additional broth or half and half if desired for a less “chunky” soup and warm through.
  12. Remove from heat and stir in spinach if using,  and half of chopped bacon.
  13. Garnish individual servings with remaining bacon, fresh parsley and Parmesan cheese.
