Super Simple Spring Salad
Amounts can be adjusted as needed.
About 1 cup grape or cherry tomatoes, preferably a mix of red & yellow -- cut in half
About 1/2 cup sugar snap peas -- stems & strings removed & cut in half or thirds depending on size
2 to 3 spring (green) onions -- sliced, use both white & green
Kosher salt & black pepper to taste
A splash of rice wine vinegar (it's slightly sweet taste imparts a great flavor in this salad)
Extra virgin olive oil -- enough to drizzle over the top
Mix all ingredients and toss.
