Smoked Cabbage

We finally tried this recipe the other day when Barry was smoking ribs. Quite tasty.

Smoked Cabbage    
Cook time: 4 to 5 hours total

Whole cabbage
Bacon – 3 to 4 strips or more if desired 
1 medium onion, diced
1 pepper, diced, optional
1 clove garlic, minced
3 to 4 tablespoon butter, melted
Salt pepper to taste
  1. Fry bacon; then add onion, pepper and garlic and sauté in the bacon fat.
  2. Core cabbage about 3/4 of the way down, removing middle core .
  3. Pour melted butter into cavity and then . . .
  4. Stuff cavatity with bacon-onion-pepper-garlic mixture.
  5. Place cabbage on foil or in a small aluminum pan, stuffed side up, and smoke, uncovered,  for 2 hours at 240 °.
  6. After 2 hours, wrap the cabbage in foil, add a little liquid of your choice and seal it up It will probably take another 2 1/2 to 3 hours hours to finish
    Cabbage prepped to go into smoker.
