Chip Oat Bars
1 cup (2 sticks) butter at room temperature
1 cup firmly packed light brown sugar
1/2 cup granulated
sugar
2 eggs
2 teaspoons vanilla
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups all-purpose flour
2 cups rolled oats (old-fashioned or quick-cooking)
2 cups chocolate chips (semi-sweet, milk chocolate, or a
combo)
1 cup chopped walnuts
- Preheat oven to 350°. Line a 9” x 13” pan with cooking spray with foil, allowing end edges to overhang; spray with pan coating.
- In a large bowl cream together butter, brown sugar, and white sugar.
- Add the eggs one at a time, mixing after each addition.
- Add the vanilla.
- Mix in the salt, baking soda, baking powder, flour and
rolled oats.
- Gently stir in chocolate chips and walnuts.
- Spread and press mixture into the prepared pan.
- Bake for about 45 minutes or until golden brown and a toothpick inserted in center comes out clean.
- Allow to cool, then lift bars out of pan by grabbing foil overhang.
- Cut into bars.
