One-Dish Casserole Cookie 8 or 9 servings
10 tablespoons (1 stick + 2 tablespoons) unsalted butter
1/3 cup granulated sugar
2/3 cup packed brown sugar
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cinnamon
1 egg
3/4 cup chocolate chips or chocolate chunks
- Preheat oven to 350°.
- Place butter in a 10-inch casserole or baking dish; place in microwave and heat about a minute or until butter is melted. Or, use a 10-inch cast iron skillet to melt butter over medium-low heat and remove pan from stove. (A 9x9-inch baking dish could also be used.)
- Stir in sugar, brown sugar and vanilla. Set aside to cool for a couple of minutes minutes.
- Add flour, baking soda, salt, cinnamon and egg; stir until smooth.
- Stir in the chocolate chips and press dough into an even layer in the skillet.
- Bake until the surface is golden brown, but the center is still slightly soft, about 20 to 23 minutes.
- Serve warm.
