Eye-catching, tasty and something different – it’s like eating eggs in a cloud! I’ve made a multitude of egg dishes but never Fluffy Eggs. Seems the recipe has been around for a long time but I had not heard of them until I ran around this recipe on Pinterest (The Reading Residence blog). Fluffy Eggs — Eggs in a Cloud 2 servings
2 eggs
2 slices of bread, lightly toasted
Grated cheese of your choice – I used Cheddar cheese
Salt & pepper to season
- Preheat oven to 375° F.
- Crack and separate the eggs, keeping the complete yolks in one bowl and the whites all together in another.
- Place toasted bread slices on a baking tray that has been lined with foil or a silicon baking sheet.
- Whisk egg whites into stiff peaks.
- Spoon around 3/4 of the egg white mixture onto your 2 slices of toasted bread.
- Using a spoon or spatula, make a depression in the center of the egg whites to create wells.
- Place egg yolks inside the wells, one in each. Season with salt and pepper.
- Then cover yolks with remaining egg whites. Sprinkle grated cheese over the top.
- Bake for 10 minutes in the preheated oven; add 1 to 3 minutes if less runny egg yolks are preferred.
