Fudgy Brownies are good without frosting but for an extra special treat I topped them with a layer of creamy chocolate ganacehe. However, instead of using heavy cream (I had none on hand), I used evaporated milk and it worked just like the cream! Growing up on a farm, we learned to use replacements and this blog contains a Mixes and More section (listed in the heading above) that includes substitutions along with homemade mixes.
Creamy Chocolate Ganache (above) spread over
Chocolate Ganache made with evaporated milk
1 1/4 cups dark chocolate chips (or semi-sweet)
1/3 cup evaporated milk
1/3 cup butter
- Place chocolate chips into a small bowl.
- In a microwave safe measuring cup, heat evaporated milk in 30 second intervals until it comes to a boil.
- Add this hot milk to the chocolate chips and cover with plastic wrap; let set for 30 seconds and then stir.
- Add butter and stir until everything has dissolved completely. Let cool until spreading consistency is achieved.
This didn’t work and was way to watery
ReplyDeleteI made a mistake by using 11/3.cup of evaporated milk. I used the whole bag of chocolate chips but didn't thicken it enough. Soo I added cocoa powder, the entire bag. It did thicken the ganache. I put it in the refrigerator to hopefully harden. I also made a white cream filling. Can't wait to slice and take a picture of this cake. Great recipe!!!

DeleteFor those saying it was too watery, the recipe calls for butter, not margarine. Mine turned out perfect.
ReplyDeleteEvaporated milk needs to be well shaken before using. Maybe that was the problem with runny ganache? In addition every recipe you read will tell you that without heavy cream the ganache will not be as thick.

I am going to make chocolate icing because ran out of crisco for white icing! I use evaporated milk also! I had an old recipe once for an icing called "Quick As A Wink" chocolate frosting It does call for powder sugar though! I use it on graham crackers for icing between two! Also and mostly love white icing on grahams! Powder sugar and a small amount of butter and a little regular milk will work and a little vanilla! We use to have to eat these when younger! Have taken them to work and white seems to be the favorite! one time I took them and a coworker said I made her favorite cookies! hahaha!!! Cheap and easy that is what I love!
ReplyDeleteOh and just googled Quick As A Wink frosting and there it is! Gotta love that google! Good for something! Type in a few key words and usually find what I am looking for! Except money! hahaha! Cannot find that!
