Bursting with Flavor Tomatoes
About 1 pint grape or cherry tomatoes
About 1 tablespoon olive oil + extra for drizzling
1 to 2 tablespoons balsamic vinegar + extra for drizzling
- Preheat the oven to 425°F. B
- Line a small rimmed baking sheet with heavy-duty aluminum foil and coat with nonstick cooking spray.
- Toss the grape tomatoes in olive oil, vinegar and honey.
- Arrange in a single layer on foil. Bake the tomatoes until they burst, about 6 minutes.
- Serve warm, at room temperature or chilled. Garnish with fresh basil.
