I used an individual gelatin mold as the syrup container. Nice to have a use for these molds that I rarely use. |
Pancakes
are a special treat and Barry usually prepares them but I’ve been seeing
pancake muffins on the internet and decided I’d adapt my homemade baking mix to
this idea . . . here’s the result (any pancake batter should work). Yum! Next time I’ll try adding some cooked sausage
to the center.
Pancake-Bacon Muffins on a Stick Makes 12
Prepared pancake
mix (I used 1 cup homemade baking mix mixed with ½ cup milk and 1 egg)
2 to 3 pieces of
bacon, fried (or microwaved) until crisp
1. Preheat
oven to 350°. Grease 12 cups in a mini muffin tin.
2. Place
about 1 tablespoon of the pancake batter into greased mini muffin cups.
3. Break up the bacon. Divide between 12 muffin cups, laying it on top of the pancake batter.
4. Top
bacon with the remainder of the batter, dividing evenly.
5. Bake
for 14 minutes.
6. Remove
muffins from molds and poke popsicle sticks into the bottom section of each.
7. Serve
with a side or bacon if desired and syrup for dipping.
